Everyday Herb Dressing


We’ve all opened our fridge to find some leafy greens or herbs not looking their prime. Instead of tossing that wilted potential away why not blitz them up into a staple everyday dressing you can use for the rest of the week? 

This recipe is super flexible to fit whatever greens you got and is a great method to extend the shelf life of your produce while preventing any unnecessary food waste! Sounds like a win-win to me! Let’s get into it!

Ingredients:

  • 350g medium tofu
  • 1 clove of garlic
  • ¼ C olive oil
  • ⅓ C water
  • 2 heaping tbsp nutritional yeast
  • 1 tsp dijon mustard
  • 1.5 tbsp maple syrup
  • 1 lime juiced 
  • Handful of any wilting herbs/greens you have (I used parsley but other alternatives can be mint, cilantro, dill, spinach)
  • Salt + pepper  to taste

Blend all ingredients until smooth and drizzle on any salad, bowls or use as a dipping sauce! Store in the fridge for up to 5 days.
